These Pepper Flakes are made with ripe homegrown peppers that were deseeded, leaving only the pepper flesh behind. This results in a more flavorful seasoning. Before dehydrating the deseeded peppers, were lightly boiled and marinated. Doing this adds a little more flavoring to the peppers and makes for a more consentient heat and flavor. Heat can vary a lot from batch to batch, but in general these are very hot pepper flakes. When I make the pepper flakes, I sift off the small pepper granules and larger pepper chunks leaving behind a more uniform assortment of flakes. Please use caution when using this seasoning, it is very strong and a little goes a long way. The flakes come in a medium size shake jar with a lid.
Hot Pepper Mix (Very Hot!)- A very colorful mix of over 50 different hot pepper varieties that range from habanero heat to super-hot pepper heat. Some of the peppers in this mix are multiple colors of habanero, ghost pepper, reaper, scorpion peppers 7 pot peppers and many other varieties. All the peppers were marinated in a mix of salt, roasted garlic, onion powder, parsley, hickory liquid smoke, and Worcestershire sauce. This mix has a very hot heat level that approaches super-hot pepper heat. I love putting pepper flakes on eggs, and pizza.
